Healthy Italian
 
Spaghetti with Tuna & Green Olive Pesto

Ingredients
    • Coarse sea salt   
    • 3/4 cup firmly packed medium-sized pitted green olives   
    • 1/2 cup thinly sliced fresh basil leaves   
    • 1/4 cup finely chopped fresh parsley   
    • 1/4 cup broken walnut pieces   
    • 1 garlic clove, roughly chopped   
    • 5 tablespoons extra-virgin olive oil, divided   
    • 1 pound spaghetti   
    • 1 lemon   
    • 1 (5-ounce) can imported tuna in oil, drained and flaked   
    • Freshly ground black pepper   
    • Freshly grated Parmigiano-Reggiano cheese for serving   

Directions

Bring a large pot of salted water to a boil.
Meanwhile, in the bowl of a food processor, combine olives, basil, parsley, walnuts, garlic and pinch salt; blend until finely chopped. With machine running, add 3 tablespoons oil in a slow stream. Blend, scraping down sides once, until smooth and well combined. Set pesto aside.
Cook pasta in boiling water until al dente. Reserving 3/4 cup pasta cooking water, drain pasta, transfer to a large serving bowl and immediately toss with remaining 2 tablespoons oil. Add pesto and half of the pasta cooking liquid to bowl; toss to combine. Zest lemon over pasta, add tuna and toss to combine. Add more pasta cooking liquid to moisten pasta, if desired. Season pasta with salt and pepper to taste and serve immediately with cheese for sprinkling

We realize, however, that in these times its not so easy to buy an award winning bottle given the prices and our general economic condition. Did you know!...

Napoleon pastry (nuh-POH-lee-uhn) - It is known as mille-feuilles in France. Outside of France it is known as 'Napoleon.' It consists of layers of puff pastry interspersed with pastry cream or whipped cream and iced with fondant and chocolate or with confectioner's sugar.

History: (1) It is believed to have been developed in France during the latter part of the 19th century. The Danish people have been told for generations that a Danish royal pastry chef invented the dessert way back in the 1800s on the occasion of a state visit between the Emperor Napoleon and the King of Denmark, in Copenhagen. Some sources believe that the chocolate lines on the pastry appear to form the letter 'N' for Napoleon. (2) A final story or tale is that the dessert was really a French invention after all, and that it was Napoleon's favorite pastry. It is said that he ate so many of them on the the eve of Waterloo that he lost the battle.

The general concensus among the food history books is that 'napoleons,' a popular flaky pastry dessert, were not named for the famous emperor.

'Napoleons...have nothing to do with Bonaparte, the daring Corsican...The name is the result of a misunderstanding of the French word 'Napolitain' which should have been translated as 'Neopolitan' pertaining to Naples. They are very much like the French 'mille-fueille' or the Italian 'mille foglie' both of which mean 'a thousand leaves

There's more to Italian food than spaghetti and meatballs. As one of the world's oldest and most influential cuisines, Italian fare has something to please every palate and cardiovascular system. Check out the following recipe from Italy...

Tortellini & Zucchini Soup
Tortellini makes a quick week night pasta dinner  but they also add substance that turns this quick, colorful vegetable soup into a meal. One caveat: Read the label carefully, and avoid pasta products made with hydrogenated oils or unnecessary preservatives. Enjoy this soup with a slice of multigrain baguette and a spinach salad.

Serves: 6
Preparation time: 40 minutes
Ingredients
2 tablespoons extra-virgin olive oil
2 large carrots, finely chopped
1 large onion, diced
2 tablespoons minced garlic
1 teaspoon chopped fresh rosemary
2 14-ounce cans vegetable broth
2 medium zucchini, diced
9 ounces (about 2 cups) fresh or frozen tortellini, preferably spinach and cheese
4 plum tomatoes, diced
2 tablespoons red-wine vinegar

Preparation
1. Heat oil in a Dutch oven over medium heat. Add carrots and onion; stir, cover and cook, stirring occasionally until the onion is soft and just beginning to brown, 6-7 minutes. Stir in garlic and rosemary, and cook, stirring often, until fragrant, about 1 minute.

2. Stir in broth and zucchini; bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until the zucchini is beginning to soften, about 3 minutes. Add tortellini and tomatoes and simmer until the tortellini are plump and the tomatoes are beginning to break down, 6-10 minutes.

3. Stir vinegar into the hot soup just before serving.
Enjoy!

Did you know!... Martini Trivia

Presidnet Franklin Delano Roosevelt loved martinis, was a sloppy mixer and he even occasionally used unconventional ingredients in his. Some of those items were anisette or fruit juice. Richard Nixon was another martini lover and liked his about seven to one. It is reported he was drinking a martini the night the Watergate crisis drove him from office.

The famous writer Ernest Hemingway also loved Martinis and his favorite was The Montgomery after the WW2 British Field Marshall who liked his odds on the battlefield to be15-1. Since Hemingway liked his ratio of gin to vermouth 15-1 he was known to always ask for Montgomerys.

WC Fields would start the day with two double martinis. He would have one before and one after breakfast. He was also known to take an oversized cocktail shaker full of Martinis to the studio for the days shoot. He drank about two quarts of gin a day.

James Bond is probably the most famous person associated with a Martini. He always asked for it to be Large and very strong and very well made. More precisely Shaken and not stirred. The Martini called The Vesper is named after a beautiful blond double agent called Vesper Lynd.

Hawkeye, Trapper and B.J. in M*A*S*H made their own gin to make martini(s) in a still in the Swamp. In the first-season episode "Chief Surgeon Who?", Hawkeye declares, "Actually, I'm pursuing my lifelong quest for the perfect, the absolutely dryest martini to be found in this or any other world. And I *think* I may have hit upon the perfect formula." Upon hearing this, Trapper asks, "Five-to-one?" Hawkeye replies, "Not quite. You pour six jiggers of gin, and you drink it while staring at a picture of Lorenzo Schwartz, the inventor of vermouth." (This is inaccurate, though, as vermouth was actually developed by Antonio Benedetto Carpano.)

Martini Recipes

The Dirty Harry!
Go ahead make my day. This Dirty Martini might just blow you away.
Ingredients:
6 oz. vodka
1 Dash Dry Vermouth
4 Stuffed Green Olives
1 oz. Brine from Olive Jar

Directions:
In a mixing glass, combine the vodka, dry vermouth, olives, and the brine.
Pour into a martini glass over ice, you can either drink it on the rocks, or strain out the ice.
And Enjoy!

Prep Time: 1 Minute
Yield: 1 serving


Dry Gin Martini
Ingredients:
2 1/2 oz. Gin
1/2 oz. Dry Vermouth
1 Cup Ice
1 Green Olive, pitted or Lemon Twist
Directions:
In a cocktail shaker with ice, pour in the gin and vermouth, cover and shake gently. Strain the drink into a martini glass, and garnish with an olive or lemon twist.
And Enjoy!
Prep Time: 2 Minutes
Yield: 1 serving

Cosmopolitan
The drink choice of the early Sex in the City gals, this pink concoction hits the right spot.
Ingredients:
1 1/2 oz. Vodka
1/2 oz. Cranberry Juice
1 tsp. Dry Vermouth
1 Twist Lime Zest, garnish

Directions:
In a cocktail shaker with ice, pour in the vodka, cranberry juice, and vermouth. Shake for 10 seconds, and strain into a martini glass. Garnish with the lime twist.
And Enjoy!

Prep Time: 5 Minutes
Yield: 1 serving
