Dear Friends,
This week's columns feature reports of my trip to Katz's Deli on the lower east side of Manhattan, and a recipe from Joe's Focacceria in Brooklyn. It was as if I got into a "way-back" machine. Nice to know some things are still around; even if they live only on the web.

Don't forget to book for Mother's Day. The holidays came only two weeks apart this year, but we have to take Mom out for "her day". Make some reservations and come on in. We won't rush you and you can relax and have us cook your meal "to order ". It may not be exactly like Mom's, but I hear where getting pretty close ( just kidding ).

 Healthy Italian
 
As a "kid" growing up in Brooklyn in the 50s and 60s, I realized early on that he who controlled the food controlled just about everything. My parents were native Sicilians who loved to cook great food for friends and famiy that appreciated their efforts. But still; every once in a while, I would be sent to Joe's Focacceria on Avenue U to pick up a little bit of this or that for them. Why? because even though they could duplicate any dish in any Italian restaurant, Joe's was trusted to make their favorite dish as well as they. After all, he was a Paisan!
The following recipe is a simple, quick and healthy preparation of fish that I can remember to this day. The recipe comes directly from Joe's family's website and I want to share it with you.

Poached Fish
"Pesce Affogato" � "Pisci Muratu"
When my family was living in Sicily the Pisci Muratu was a favored dish and it was prepared often.  "Muratu" that means walled up, is a way of cooking, where the skillet is covered and sealed with a tight lid so that the steam won�t escape and the food will cook rapidly.?This manner of cooking is appreciated because it keeps the fish moist, enhances its taste and the herbs and vegetable broth used for liquid gives it an exciting aroma.?The vegetable broth, used in this preparation, can be very delicate and subtle or robust, depending on your preferences. There are no set rules in the preparation of the broth, but on the contrary, your taste, your imagination and mainly what is available in your refrigerator or your pantry, will dictate the type of vegetables to be used. Parsley, bay leaves and either sliced onions, scallions, shallots or leeks should be utilized to give this dish its characteristic aroma.?You can add any vegetables you choose like celery, carrots or chopped fennel fronds. You can include any of your preferred herbs like basil, mint, sage, marjoram, thyme, rosemary, oregano or any spice like cloves, pepper, saffron, or allspice.?Fish fillets or steaks are favored in this preparation, and the lean type of fish, like black sea bass, flounder, grouper, haddock, halibut, pollack, ocean perch, red snapper, shark, scrod, tile fish or whiting would be preferable.?Buy from a reliable fishmonger and make sure that the fish fillets or steaks have a fresh smell, firm flesh and moist look.

Serves 4

Ingredients:
  • 6 tablespoons of olive oil
  • � medium sliced onion
  • 2 bay leaves
  • Pinch of marjoram or oregano
  • 2 tablespoons of Italian parsley, finely chopped
  • 1 � cups of vegetables, washed and diced, use celery, sliced carrots, or any other greens
  • 2 cups water
  • Salt and pepper
  • pinch of hot red pepper flakes (optional)
  • 4 fish fillets, 6 to 7 oz. each, wash and pat dry
  • lemons and parsley leaves for garnish

Preparation?In a 4-quart saucepan combine 3 tablespoons of olive oil, onion, bay leaves, marjoram, parsley, vegetables and water.  Add 1/2 teaspoon of salt, some red pepper (optional) and cook over medium heat for 20 minutes, until water reduces in half. If needed add some more water. Discard bay leaves. In a 12 inches skillet place 3 tablespoons of oil, pour in half of the broth, add vegetables and lay fillets over it, skin side down. Lightly sprinkle with salt and pepper and pour remaining broth and vegetables on top. Cover skillet with aluminum foil and place lid on top. Cook fish for 6 minutes over high heat. Transfer to a serving dish, spoon pan juices and vegetables on top, garnish with lemons and parsley.

Iron Eyes Cody, the famous American Indian who co-starred in films with the likes of John Wayne, Glenn Ford, and others, was actually of Italian descent! Thats right he was Italian. The guy with the tear in his eye in the 70s "save the environment" commercials. He was Italian! Go figure!

We have made our mark on the American landscape; but Iron Eyes Cody, who knew!

I recently ventured into Katz's Deli in NYC. Hadn't been there in years. Nothing changed: which I liked. Except there was a sign and a down-pointing arrow above a table. It read "this is where Harry met Sally " 
The movie has left an indelible mark on our collective memories because of this restaurant and that thing she did where she......well, you remember!  The lady next to her wanted to order "what she was having".  ( That was Rob Reiners mom)
Anyway, a couple of quotes from the movie as a tribute to Pastrami on rye, knish, pickles and a cream soda...mmmmmmm!"

 Healthy Italian
 
 
Some of you may know that my wife and I are both Sicilian. When we were growing up in New York our parents made a form of Easter Bread, actually Easter cake. Semi-sweet, glazed with sugar and sprinkles and adorned with whole cooked, colored eggs. We loved it. We found a "write-in" recipe we want to share. It seems to be what we remember our Moms making and seek to preserve this tradition for you. Try it! It's fun to make and the whole family gets involved making shapes, baking and, of course, eating. ( with a cup of espresso, please!)
 
Sicilian Easter Bread ( Pupoconuovo )
 
Take note that this was done in a KitchenAid mixer:
Pastelli Di Pasqua?4 C flour?4 t baking powder?1/2 C shortening?4 raw eggs?1/4 C orange juice?1 C sugar?2 t vanilla?6 hard-boiled colored eggs 1 egg, beaten?colored sprinkles ( non-pareils ).
Sift flour, baking powder, and salt on board. Cut in shortening. Add raw eggs one at at a time; mix. Add orange juice, sugar, and vanilla. Mix until dough is soft. Knead 10 minutes, or until smooth and satiny. Place in covered bowl; set aside 1/2 hour.
Roll dough under palms of hands on floured board; flatten slightly; shape into large ring. Press (bury) colored eggs on top of ring; brush with beaten egg; dust with sprinkles; bake in hot oven (425 degrees) 30 minutes, or until golden brown.
Please let me know how it turns out. I think it's really delicious. Not overly sweet, crumbly. The memories are really what I love about this bread.
