This Week at Casa Dante

Dear Friends:
The press often refers to Casa Dante as "old school".  This designation upset me in the past, but I have a new philosophy about it. Most of the large chains try to recreate a feel and atmosphere which we have as a matter of course.   Oak and Mahogany panels, old world charm, professional staff & Maitr'd. They get it right sometimes, but you can't beat the real thing. You can't beat 40 years of getting it right, and great food!.
We had a fun-filled evening with Julian & Dominique last Saturday night. If you haven't experienced Casa Dante with entertainment, start with them & our food, of course. J & D are warming up for the New Years Eve Bash in which they're the featured entertainment. We are accepting reservations in the main dining room and front dining room for the evening. Book now as time is getting short!

Healthy Italian

Fusilli with Scallops and Peas
 

Ingredients

  • 2  quarts water
  • 2  cups  (6 ounces) sugar snap peas, trimmed
  • 12  ounces  uncooked fusilli or rotini
  • 1  tablespoon  butter
  • 1  pound  sea scallops (halved if large)
  • 2  garlic cloves, minced
  • 1/4  cup  dry white wine
  • 1  ounce  block-style 1/3-less-fat cream cheese
  • 1/4  cup  fat-free, less-sodium chicken broth
  • 1  tablespoon  fresh lemon juice
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper
  • 1/4  cup  thinly sliced fresh basil

Preparation

1. Boil water in stockpot. Add peas; cook 3 minutes. Remove; add pasta to boiling water and cook according to directions.
2. Melt butter in large skillet over medium-high heat. Add scallops; sear 1 minute per side and remove. Add peas and garlic; saut� 1 minute. Stir in wine, scraping pan to loosen browned bits; cook 1 minute. Add cream cheese; stir until melted. Stir in broth, lemon juice, salt, and pepper; cook 30 seconds. Remove from heat; return scallops to mixture.
3. Drain pasta; return to pot. Add scallop mixture and basil, and toss. Serve hot.

Dear Friends
We travel extensively and have noticed that we meet two types of people most often, regardless of where we are; they are people from Brooklyn and people from Jersey City.
From California to Florida, Maine to Arizona it never fails; we have influenced and stretched out across this nation. I read somewhere that a huge percentage of this country's population can trace their roots to our region. 
 I sit accross someone who looks like an "easterner" or a friend or family, and invariably I ask the question " what accent is that?"  "Jersey City, what's it to ya!"   In Santa Monica of all places. Gotta love it!  ( and more often then not, they know Casa Dante....unbelievable!)
We are all over the world and our style of food is most often sought after with great longing. I'm glad we're still here enjoying what we have, because believe me, when you retire to North Carolina, or Scottsdale or wherever, you're going to miss this food

Penne with Vodka Sauce & Capicolla

 
This velvety tomato sauce is spiked with cubes of salty capicolla and a few shots of vodka. Make it a Meal: Caesar salad and a glass of Pinot Noir will shine with this dish.

Ingredients

  • 12 ounces whole-wheat penne
  • 1 2-ounce piece capicola, or pancetta, finely diced (see Tip)
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1/2 cup vodka
  • 1 28-ounce can crushed tomatoes
  • 1/4 cup half-and-half
  • 2 teaspoons Worcestershire sauce
  • 1/4-1/2 teaspoon crushed red pepper
  • 1/4 cup chopped fresh basil
  • Freshly ground pepper, to taste
 
  1. Bring a large pot of water to a boil. Cook penne until just tender, 12 minutes or according to package directions.
  2. Meanwhile, cook capicola (or pancetta) in a large saucepan over medium heat until crisp, about 4 minutes. Drain on a paper towel.
  3. Return the saucepan to medium-low heat; add onion and garlic and cook until the onion is translucent, about 1 minute. Increase heat to high; add vodka and bring to a boil. Boil until reduced by about half, about 2 minutes. Stir in tomatoes, half-and-half, Worcestershire sauce and crushed red pepper to taste; reduce to a simmer and cook until thickened, about 10 minutes.
  4. Drain the pasta; serve topped with the sauce and sprinkled with the capicola (or pancetta), basil and pepper.

Tips & Notes

  • Tip: Capicolla and pancetta can be found in the deli section of most large supermarkets. Buy one thick piece for this recipe.

Creamy Pasta With Roasted Zucchini, Almonds and Basil
We at Casa Dante have been featuring whole wheat and grain pastas for years. Many of our customers have become accustomed to this nutrional and tasty alternative to regular pasta. See this recipe for Creamy Pasta with Roasted Zucchini, almonds and basil. Delicious!

Creamy pasta with roasted zucchini, almonds and basil.

2 medium zucchini, cut into
1/2-inch cubes (about 3 cups)
1 1/2 tablespoons extra virgin olive oil
3/4 teaspoon kosher salt
Pepper, to taste
2 tablespoons slivered almonds
1/3 cup heavy cream
1 sprig basil, with leaves and stem
3 tablespoons goat cheese
1/2 teaspoon finely grated lemon zest
6 ounces whole-wheat spaghetti or linguine.

1. Heat oven to 500 degrees. Toss the zucchini and oil with 1/2 teaspoon salt and pepper to taste. Arrange zucchini on a baking sheet in a single layer. Roast, tossing occasionally, until golden and tender, 20 to 30 minutes.
2. Meanwhile, toast the almonds in a skillet over medium heat until golden, 3 to 4 minutes. Transfer to a small bowl.
3. Simmer the cream and basil sprig in a small saucepan over medium heat until reduced to 1/4 cup, about 7 minutes. Whisk in the goat cheese until the sauce is smooth. Remove from heat; stir in lemon zest and 1/4 teaspoon salt. Cover and keep warm.
4. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions. Drain well. Toss the pasta with the cream sauce. Serve topped with the zucchini and almonds.
Yield: 2 servings.
