This Week at Casa Dante

Dear Friends:

Holiday Season is always exciting in the restaurant business. Everyone comes out with a smile and a great mood. Given the recent economic situation, this is by itself a great accomplishment. But we are trying our best to make all forget their troubles and celebrate the joy of life and food and, of course, fine wine!
We hope you and your family can celebrate with us this Thanksgiving Day. Come in for a leisurely Turkey Dinner or order from a special ala carte menu. Kitchen is open from 1 till 9, and we're taking a table for our family ( so wave!).
Christmas Eve dinner will consist of the traditional fish dinner as well as many regular menu choices. A quiet, comfortable evening for those celebrating this holiday.
New Years Eve Bash celebration is booking now. Please reserve your places. Last years party was grand, even in the throes of this "great recession" and all indications are that  this year's  will be a blast. Julian and Dominique will be entertaining us all night long. Healthy Italian

Healthy Low Cal Brushetta Canape Recipe

Bruschetta is a delicious appetizer from central Italy that dates back to the 15th century. There are many variations of this delightful appetizer. Cooking Italian usually results in colorful, tasty food.  This low calorie appetizer is very attractive when served on a platter at a party.
Ingredients:
  • 1 garlic clove, peeled and halved
  • 14 slices French bread �� thick
  • 4 medium tomatoes, seeded and diced (plum tomatoes work well also)
  • � cup of red onion
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. minced fresh basil
  • � tsp. salt
  • 1/8 tsp pepper
  • 14 fresh basil leaves .
Rub the garlic clove over one side of each slice of bread. Place bread garlic side down on an ungreased baking sheet. Bake at 350� for 5 minutes on each side, or until lightly browned. In a bowl, combine the tomatoes, onion, oil, finely minced basil, salt and pepper.
Spoon about 2 tbsp. onto each piece of toast with the garlic side up. You could sprinkle the canap� with a light amount of your favorite low-fat shredded cheese, usually mozzarella. Top each canap� with a basil leaf.
Yield is 14 servings. This dish only takes about 30 minutes from start to finish and it is well worth the effort.

Wines With Sulfates Will Give You a Headache
Sulfates only cause headaches in about one percent of the population and this tends to be those who suffer from asthma. Sulfates are naturally present in wine and sulfur is abundant in various forms in all living things. Sulfites are used as a preservative by winemakers worldwide and only the United States notes the sulfite warning on the label. The amounts of added sulfites are small and all whites will have more than reds.
There are several other reasons that you may be having a headache. These causes may be:
� Histamines: Histamines cause the blood vessels in your brain to dilate and are higher in red wines than whites. They are found in aged and fermented foods.
� Tyramines: Found in cultured foods such as cheese and yogurt as well as ferment foods such as wine, dark beer, soy sauce, chocolate and a few other foods. Tyramines cause your blood vessels to constrict.
� Congeners: These are organic compounds that are found in the by-products of the fermentation process and give wine its flavor. When they enter your blood stream, the immune system recognizes them as poisons and releases cytokines to eliminate them. These are more prevalent in red wines.
� Prostaglandins: These are naturally occurring in your body and are pain producers. The dilation of the arteries triggers their release. They may also be responsible for migraine headaches.
� Sensitivities to Elements in Wine Production: Some people are sensitive to certain types of wood while other are sensitive to the chemicals that are used in a particular area.
