Happy Fourth of July!

Casa Dante will be open, as usual, for Saturday diners  but will be closed for Sunday and Monday July 3rd and 4th respectively in celebration of the holiday.
If your plans don't include the shore, come by for a great meal!

Summer Prix Fixe menu starts July 5. Fresh Grilled or Roasted Fish, Grilled Vegetables, Whole Wheat Pastas with Vegetable toppings and Dessert Fruits.
 
Casa Dante wil be closed Sundays from July 3 thru July & August excepting scheduled parties
 
Summer Wine Tasting . Light full bodied or dry white summer choices for the tasting. Light courses of passed Italian delicacies and desserts. Date to be announced!

Italian Stuffed Peppers   
A great holiday treat, pre made and ready to eat.( that rhymes?!)


Ingredients
  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/2 teaspoon Italian seasoning
  • 3 cloves garlic, chopped
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 6 white mushrooms, chopped
  • 1/2 small onion, finely chopped
  • 4 bell peppers, tops cut off and seeded
  • 1 (26 ounce) can spaghetti sauce
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking dish with aluminum foil.
  2. In a large bowl, mix together ground beef, bread crumbs, Italian seasoning, garlic, 1/2 cup of the mozzarella cheese, 1/2 cup of the Parmesan cheese, egg, onion and mushrooms. Spoon mixture evenly into the seeded bell peppers. Replace tops. Place stuffed peppers in lined baking dish.
  3. Bake in preheated oven for one hour, or until meat stuffing is cooked through. Remove from oven and discard pepper tops.
  4. Sprinkle tops of peppers with remaining mozzarella and Parmesan cheeses. Return dish to oven until cheese is melted, about two minutes.
In a saucepan, heat spaghetti sauce on stove over medium heat, stirring regularly. When sauce begins to steam, remove from heat and pour over top of peppers.

Dear Friends:

Seems like summer started early this year, and most of our friends head out to the shore or the Hamptons on weekends. We have plenty of great food and entertainment to keep you around. Our "theme" this week is foods of Genoa. A terrific historical city ( Columbus was born there ) and great food source for most Italian menus ( See the two tomato pesto recipe below ).
If you want to beat the shore traffic, come up and see us. Good food, wine and music

Healthy Italian
 
Pesto a Due Pomodori
This is a great northern Italian taste. Pesto from sun-dried and cherry tomatoes.
 

Ingredients
1 scant cup drained oil-packed sundried tomatoes ( from 8.5 oune jar )
1/2 cup Extra Virgin Olive Oil
1 Packed teaspoon salt packed capers, rinsed, soaked in cold water for 10 minutes, then rinsed again
1 pint ( about 2 1/2 cups ) cherry or grape tomatoes, quartered
3 tablespoons freshly grated Reggiano Parmigiano or Grana Padano cheese
1 tablespoon finely chopped fresh chives
Directions:
In a blender, puree sun-dried tomatoes, oil and capers until well combined. Add cherry
tomatoes and puree until smooth, adding 1 to 2 tablespoons of warm water and stopping machine to stir, if necessary, to help blend.
Transfer pesto to a bowl and stir in cheese and chives.
Perfect for: 1 lb pasta- use linguine, spaghetti  or cheese stuffed tortellini ( my favorite) or ravioli. Or just use as a spread for panini. Delicious!
