Happenings at Casa Dante         Theme menu for the week is "Foods of the Amalfi Coast". Our " Additions" to our regular menu will include choices from Positano, and nearby locales If you have any suggested foods or recipes please let us know at info@casadante.com     Father's Day is Sunday June 19th and we will be honoring Dad with a special "Dad's" Menu and 1/2 priced wines from our wine list for email, facebook and twitter customers.   Casa Dante wil be closed Sundays from July 3 thru July & August.   I will soon announce a special Summer Wine Event. Light full bodied or dry white summer choices for the tasting. Keep this in mind as I may include light courses of passed Italian delicacies and desserts. To be announced!   Spring is celebration time. Remember that we have special menu's  for parties, graduations, communions, baptisms, weddings and rehearsal dinner. Check with our staff for dates and times you need. !           Healthy Italian   Buca di Beppo Rigatoni Positano several weeks ago I featured Rigatoni with eggplant ( which is a favorite at Casa Dante). This recipe is a bit of a variation from the Amalfi Coast. Specifically, Positano! Enjoy! 1/2 ounce fresh basil 15 ounces marinara sauce 6 ounces fresh mozzarella cheese 3 ounces romano cheese, grated 3/4 lb chicken breast, cooked sliced 1 1/2 tablespoons garlic, minced fresh 4 1/2 ounces olive oil 1 lb eggplant, chopped into inch cubes 16 ounces rigatoni pasta, cooked & make it whole wheat. You can't tell the difference and its healthier!   Directions: Prep Time: 15 mins Total Time: 30 mins Heat olive oil. Add eggplant and saute until brown and soft. Add chopped garlic and saute. Add sliced chicken breast, and marinara. Reduce heat. Toss cooked rigatoni pasta with sauce; then romano cheese, fresh chopped basil, and fresh mozzarella cheese.
