This week at Casa Dante

Dear Friends:

As you may know, we are doing "themed" additions to our menu this sumer season.  Please note them on the "specials" page on the left side of our menu.
This weekend's "Theme" is "Foods of Naples" and vicinity. Great foods from this region dominate the Italian food landscape in the U.S.  Most dishes introduced around the turn of the last century were actually recipes brought over by Italian laborers and their families from this region. Of course they were further enhanced by the greater availability ofproducts here ( ie: spaghetti and meatballs was an American enhancement. It did not exist as a combination in Italy at that time).
We will feature some of these dishes along with our menu, wines and entertainment. Add the live Neopolitan songs of  Leo D'Angelo and you will feel like you're on a trip to the old country.
Bring Mom & Dad along, they will love it!
Speaking of Dad, I am offering half-price bottles of wine from our wine list on Father's Day, June 19th. Don't let Dad sweat over the bbq. Bring him in and we'll treat him like royalty.

Father's Day is Sunday June 19th and we will be honoring Dad with a special "Dad's" Menu and a few other surprises.
 
Casa Dante wil close Sundays from June 26th thru July and August.
 
I will soon announce a special Summer Wine Event. Light full bodied or dry white summer choices for the tasting. Keep this in mind as I may include light courses of passed Italian delicacies and desserts. To be announced!
 
Spring is celebration time. Remember that we have special menu's  for parties, graduations, communions, baptisms, weddings and rehearsal dinner. Check with our staff for dates and times you need. !

Healthy Italian
 
Rigatoni with Creamy Eggplant and Mozzarella
 
You've seen this dish here at Casa Dante. Tasty and easy to make. If you want to delight your summer guests, try bringing this out on  a large platter, served family style; and don't forget to top off with fresh basil. Delicious!
 
Yield:
4 to 6 servings
    Ingredients
    • 1/4 cup extra-virgin olive oil
    • 1/2 medium yellow onion
    • , finely chopped (about 1/2 cup)
    • 4 medium garlic cloves, thinly sliced (about 1 tablespoon)
    • 2 medium Japanese eggplant
    • , medium dice (about 4 cups)
    • 1 (15-ounce) container crushed tomatoes
    • 1/4 cup heavy cream
    • 1/2 cup loosely packed thinly sliced fresh basil
    • leaves
    • 1 pound rigatoni or penne rigate
    • 8 ounces buffalo mozzarella
    • , small dice
    Directions
    Bring a large pot of salted water to a boil
    over high heat.
    Meanwhile, heat oil in a large frying pan
     over medium-high heat. When it shimmers, add the onion and garlic and cook until just softened. Add eggplant, stir to coat in oil, then let cook, stirring rarely, until softened and golden brown, about 5 to 7 minutes. Remove half eggplant mixture and reserve.
    Meanwhile, add the pasta
    to the boiling water and cook according to the package instructions.
    Reduce heat to medium-low, add the tomatoes, cream
    , and half the basil, and let simmer, stirring occasionally, until flavors meld and sauce is slightly thickened, about 4 minutes.
    Drain pasta and return to the pot off the heat. Pour sauce over top and stir until well coated. Add reserved eggplant, remaining basil, and mozzarella and mix until the cheese starts to soften. Serve immediately.
